This is a regular lunch or dinner. Served on a chopped baked potato on a bed of spinach or kale. Reheat on microwave to wilt greens. On top serve a favorite relish like corn relish or salsa.

½ red onion chopped

3 carrots chopped

3 celery stalks chopped

5 minced garlic cloves (I use a garlic press. No garlic smell on fingers)

2 heaping cups of dried beans. (half kidney half black beans)

8 cups of water

2 teaspoons salt 1 teaspoon pepper (I like lemon/pepper by Shilling)

2 tablespoons chili powder

1 minced Fresno red chili

1 bay leaf

1  15 oz can diced tomatoes

1/2c TVP (Txtured Vegetable Protein)

Put chopped red onion in instant pot. Press saute button and saute for 5 min. Add chopped carrot, celery, minced garlic, beans, water, salt, pepper and bay leaf. Press cancel. Close and secure lid. Push beans button. Instant pot will start on its own. Wait an hour. Make sure button on top is recessed before opening.  Add tomatoes after chili is cooked. Add 1/2c TVP (it absorbs liquid. No need to cook) You will be amazed how it tastes like hamburger added.
