When I was a kid my Dad loved pea soup and my Mom complained she had to make so much. Along with the baked beans she made. Who knew he was on to something.

We make a pot or 2 of soup a week. This is a favorite.

In an Instant Pot. (A must appliance)

2c. dried split peas (buy in bulk; cheap)

8 c  water. You may need to add vegetable broth if too thick. Pea soup thickens on its own when you put in fridge overnite

1 small onion diced

2 carrots diced

2 stalks celery diced

1 small potato diced

2t crushed garlic. or 2-3 cloves minced

1 teaspoon salt or miso

1 TBS  poultry seasoning

2 teaspoons ground dill. opt.

1 bay leaf

If you would like but not necessary, use saute setting on instant pot to saute the carrot,onion and celery. After 5-10 min add the rest of ingredients. Close lid and press soup setting. Wait until button on top becomes recessed so then you can open lid. 1 hr from start to finish. I’ve started before work and it seems to be fine and ready when I come home as there is no meat in it.

I serve with croutons I make in oven. If they have good bread at a restaurant I take home, cube, sprinkle w/ a little garlic salt and spray with the olive oil spray LIGHTLY.  Bake 350 just under 10 min.
